Macadamia, Oat & Bnana Pancakes

Ingredients - You will need…

  • 2 x Bananas

  • 2 x Eggs

  • 1/2 Cup of Porridge Oats

  • 1/2 Tsp Baking Powder

  • Pinch of Salt

  • 1 Tsp Ground Cinnamon

  • 1 Handful of Macadamia Nuts

  • 1 Blender

  • Honey & Fruit to Serve

Method

  1. Throw all ingredients into the blender and blend until smooth.

  2. Leave batter to stand for 20 mins

  3. Spoon  the batter into a non-stick frying pan, spread with a spoon or spatula to create the desired size circle.

  4. Fry until golden on both sides.

  5. Serve with honey and fruit.

A healthy and filling option ready for Tuesday 5th March 2019, Pancake day! I’ve scoured the internet looking for a banana and oat pancake recipe to enjoy on Pancake day and found that most of them included a long list of ingredients. Long ingredients lists and complicated methods are just not for me, pancakes aren’t supposed to be hard work, they’re supposed to be quick and easy! Luckily, I eventually stumbled along this one here and just added a couple extras that can easily be substituted or removed if you don’t have them in the house.

If I ever share a healthy recipe on this blog it is definitely not because I’m on a diet. I no longer believe in diets, Slimming World is okay as far as they go but even that can suck the joy out of life. The short of it is, I’m still enjoying cake and chips to my hearts content, but I am hoping to improve my mood and energy levels by including as many different fruits and veg into my meals as possible. Hence this pancake swap.

This recipe is a filling and delicious alternative to the traditional, flour milk and egg cupboard purge. If I’m honest I think they’re much better than normal pancakes anyway. It’s also a great way to use up old bananas on the turn which is exactly the reason I made these.

So if you’re making pancakes this Shrove Tuesday why not consider swapping the white flour and milk for oats and bananas? The oats are filling and the banana and cinnamon make them tasty and sweet even without a topping.
